Emma's First Christmas Tree
Blogging Slacker
I have to admit that I have slacked off on keeping up on my blog. I was encouraged this morning looking at everyone's holiday pictures to get some more pictures on here. As some of you may know Emma was losing weight, but she is now gaining weight and looking healthy.
Here are some great pictures of her. I especially like the one where she looks like she wants to punch someone.

Amazing Chicken Tortilla Soup
Try this recipe - super easy - super tasty!!
2 tsp. olive oil
1 medium onion
4 garlic cloves
1 medium jalapeno pepper, chopped- optional
1/2 green pepper
4 small boneless chicken breast
2 cups frozen corn
1/2 cup cooking white wine or water will work
2 tsp. cumin
1 tsp. chili powder
1/4 tsp cayenne pepper
4 (14 oz.) cans chicken broth
2 (14 oz.) can diced tomatoes
2 (8 oz.) cans tomato sauce
Saute onion, garlic, jalapeno and green pepper with olive oil in a large pot.
Add the rest of the ingredients to the large pot and bring to a boil
After 15 minutes, remove the chicken breasts and shred (two forks work best for this)
Return the chicken to the pot and simmer for 15-30 minutes
Serve with tortilla chips, sour cream or avocado
*I usually cook my chicken in the crock pot - it takes a couple of hours, but the chicken breasts are so easy to shred.

Emma went into the dr. this morning she weighs 10lbs. 3oz and is now 24 inches long.
