Try this recipe - super easy - super tasty!!
2 tsp. olive oil
1 medium onion
4 garlic cloves
1 medium jalapeno pepper, chopped- optional
1/2 green pepper
4 small boneless chicken breast
2 cups frozen corn
1/2 cup cooking white wine or water will work
2 tsp. cumin
1 tsp. chili powder
1/4 tsp cayenne pepper
4 (14 oz.) cans chicken broth
2 (14 oz.) can diced tomatoes
2 (8 oz.) cans tomato sauce
Saute onion, garlic, jalapeno and green pepper with olive oil in a large pot.
Add the rest of the ingredients to the large pot and bring to a boil
After 15 minutes, remove the chicken breasts and shred (two forks work best for this)
Return the chicken to the pot and simmer for 15-30 minutes
Serve with tortilla chips, sour cream or avocado
*I usually cook my chicken in the crock pot - it takes a couple of hours, but the chicken breasts are so easy to shred.
